For myriad reasons left unexplored here, potatoes Anna has something of a reputation for being a complicated dish. Yet, sometimes the most complicated seeming dishes are actually the most straight-forward to prepare. That’s certainly the case with InterWined’s Own recipe for Sweet Potatoes Anna.

Paired with InterWined’s Own Seared Tuna Sweet Potatoes Anna, the recently reviewed 2003 Ronco del Gnemiz Tocai Friuliano. While the wine received the poorest review of the Ronco del Gnemiz wines featured in January on InterWined.com, it proves a strong pairing partner to the seared tuna and sweet potatoes Anna. With its taste of honey, it makes a great partner for the sweet potatoes, while the flinty finish goes quite well with tuna too.

InteWined’s Own Recipe in Full

Seared Tuna Sweet Potatoes Anna

Ingredients:
1-2 Tuna steak
Olive oil
Coriander
Butter
3 Sweet potatoes
Salt
Pepper
Parchment paper (cut into circles the size the pot used)

Preparation:
1. Preheat the oven to 200°
2. Slice the sweet potatoes into thin circles
3. Butter one round of parchment paper and place it at the bottom of a thick metal pot
4. Arrange the sliced sweet potatoes along the bottom of the pan in an overlapping concentric circle
5. Place slivers of butter across the top of the potatoes and season with salt pepper
6. Repeat steps four and five to fill the pot, before covering with parchment paper
7. Place a slightly smaller, heavier pot on top of the potato-filled pot before placing in the oven and cooking for approximately 30 minutes or until golden
8. After running a knife between the edge of the pot and the potatoes, place a baking tray over the top of the pot and carefully overturn
9. Return the potatoes to the oven for an additional 15 minutes
10. Remove the oven and prepare to serve
11. Heat a dash of oil in a saucepan or skillet on high heat
12. Lower the heat and add the tuna steak and sear on each side for approximately 1-2 minutes (be sure not to overcook the tuna)
13. Garnish with coriander and serve
